咖啡界的“小白” --- Flat White 馥芮白(馥芮白咖啡好喝吗)

“湿卡布”?“小拿铁”?不,它是独一无二的“馥芮白”!

Intro:
Some refer flat white to “wet cappuccino”, while the others may regard it as “small latte”. The unique coffee beverage is part of a thriving, espresso-focused culture that has enthusiastically exported itself worldwide. Most popular in Australia and New Zealand, Flat White is generally prepared with 1/3 espresso and 2/3 steamed milk. But since double shots of espresso or Ristretto are involved, it is still the coffee that does most of the talking, not the milk.

What Makes Flat White So Unique?

微泡沫,让它比拿铁更丝滑,比卡布奇诺更易饮
Less milky than a latte, less foamy than a cappuccino, the Flat White fills the void that once existed between Latte and cappuccino with decent caffeine strength. It is Micro-foam that gives Flat White such luxury and creamy mouthfeel, thus distinguishing it from the other two drinks. “Flat” is used to coin this special type of milk foam only seen in this beverage.
The term micro-foam refers to a specific kind of frothed milk that is very velvety but not considered to be pure froth. As the key to a proper flat white, micro-foam is made with a steaming wand to create frothed milk with bubbles so refined that they are almost indiscernible. Timing and temperature are highly important for the steaming process. To prevent the milk from breaking into “real” bubbles, it must be steamed at a consistent temperature for a monitored time limit. Also, correct pouring and blending of the foam to the coffee decides the ultimate quality of a Flat White.

Flat White vs. Cappucino
Generally,Cappuccino can have quite thick foam between 1.5cm to 2.0cm and sometimes be topped with chocolate powder. Flat White has significantly less foam and is smaller in size than Cappuccino. On the palate, Cappuccino features stiff and dry foam on the top, which may make you feel like drinking bubbles with a layer of coffee hidden at the bottom. By contrast, a Flat White tastes like a more delicious version of plain espresso, since the froth on the top is much silkier and “wetter”.
Flat White vs. Latte
Most straight forwardly, Flat White is a more compact drink compared with Latte. While a standard Latte is around 300ml, the size of a Flat White is usually 215ml-240ml. Also, Flat white is best appreciated when served in a ceramic cup. But the major difference between a latte and a flat white is the proportion of milk and coffee. Although much more milk is used in Latte, it has almost no froth on the top. Conversely, Flat White is much frothier and punchier with double amount of espresso than that of Latte.

Derek Townsend (1984)
New Zealanders claim the flat white was first invented by the barista Derek Townsend at the DKF Café in 1984.
Alan Preston (1986-1989)
This guy was the founder of Moors Espresso Bar and owner of an Auckland Cafe. It has been variously said that Flat White appeared on their menu firstly in 1989, then 1988 and now in 1986.
Jeff Kennedy (1990)
Another saying goes that it was invented by New Zealand coffee pioneer Jeff Kennedy at Wellingtons Caffè Laffare, which he founded in 1990.

A customer at Café Bodega in Wellington, who accidentally invented the term “flat white” to describe an incorrectly frothed cappuccino in 1989.

Instant Coffee
However, legend also has it that Flat White originated from Australians’ love towards instant coffee. “Instant coffee was the dominant coffee in Australia,” says Les Schirato, CEO of Vittoria Coffee. “Then in the late 80s Italian-based espresso started to grow.” But instant coffee drinkers wanted an espresso-based drink that resembled what they were used to, not the aerated frothy Cappuccino from Italy, so baristas started making coffee with less foam.

In a new study posted on the journal called Food and Chemical Toxicology, researchers reviewed 740 papers looking at the effect of caffeine on adverse cardiovascular events, behavior, reproduction and development, toxicity and bone density. They concluded that the evidence “generally supports” consumption of up to 400mg caffeine a day in healthy adults – thats about four small cups – and up to 300mg caffeine/day in healthy pregnant women.
Consuming more than that regularly was associated with a plethora of problems including depression, anxiety, hypertension and even sperm with DNA damage.
So, is Flat White a caffeine-rich beverage?

The answer is “NO”.
